week eleven – casserole dish à la gioia

let me tell you a little somethin’ about me: i have a strange irrational fear of béchamel sauce. yes, the one made from a rue and cold milks. that one. i wouldn’t exactly call it a saucophobia, but ever since i can remember the thick, white liquid has caused me great discomfort. i have gotten better over the years but have yet to fully discover. and so i thought to myself: ‘what better week to confront my fears than casserole week?’ (just one of my regular thoughts). and confront i did.

as always, there were oh so many options. a crumble. a pie. a crummble. a bake. a crummmble. a lasagna. the latter is what i went for. a vegetarian butternut-squash-tomatosauce-spinach-home-made-pasta-lasagna, to be unnecessarily exact. to be honest, it was one of those recipes i kind of made up as i went. as i tend to. i had googled butternut squash lasagnas to get some inspiration, but none of the suggestions truly tickled my fancy. ultimately, i stacked the lasagna as followed:

– a bit of my feared béchamel
– lasagna sheets
– roasted butternut squash and caramellised onions, slightly mashed with a potato masher
– more béchamel
– lasagna sheets
– tomato sauce with fresh baby spinach
– béchamel again
– lasagna sheets
– for the last time, béchamel (phew)
– a nice handful or two of freshly grated parmigiano reggiano

out of the oven, into my mouth. the end.
