brace yourselves, there is going to be some insane mac’n’cheese action – right here, right now. if ever there was a grown-up version of mac’n’cheese, this is something like its mutant. i kid you not; we’re talking r-rated mac’n’cheese. there is bourbon and there is blue cheese, something i am convinced any child in its right mind would refuse to eat. excited? (i am, if you hadn’t noticed.)
just like last week, i am going to confront you with another shocking fact about myself: before today, i had never made macaroni and cheese. i’d eaten it, sure, the swiss version ‘älplermagronen’ anyway, but never attempted making it. so in preparation for this week’s challenge i had to do some research first. after consulting the internet (how did people ever survive without the internet, is what i am constantly asking myself these days…) i learnt that it is quite easy to make the world’s most popular comfort food. all one needs is pasta and cheese – lots of cheese. after looking at what felt like more mac’n’cheese recipes than anyone could ever cook during a lifetime, i finally stumbled upon this one. bourbon mac’n’cheese? count me in!
however, bourbon alone was not going to satisfy me. to make things a bit more interesting, i decided to add said blue cheese and bacon (because why not?) to the mix. and so, i present to you my very own version of the classic.
taking the above bourbon recipe as a rough guide, i substituted the heavy cream for milk and used gruyère, cheddar and blue cheese instead of cheddar, gouda and jarlesberg cheese, respectively. also, i omitted the mustard and spices, seasoning only with salt, pepper and a pinch of nutmeg. last but not least, i used bacon instead of prosciutto. in contrast to the relatively small number of ingredients needed, i have never used more pans and bowls to prepare what is ultimately a one-bowl dish. trust me though, you’re going to be thankful for the dishwashing action while you’re waiting for the cheesy goodness to come out of the oven. plus, dishwashing must burn at least a few calories, right?
