i know the theme this week was HOT drink…but hear me out. we’ve had the hottest weather of the year the past few days. blue skies, temperatures that make you want to have a bucket of water within easy reach at all times and a lot of sunshine. summer has arrived and it’s amazing, don’t get me wrong. but who drinks hot beverages in summer? believe me, i wanted to make a hot drink, i really did. but for the love of gioia, if it’s 30 degrees plus outside and the forecasted thunderstorm just won’t arrive, i simply couldn’t. fortunately, most hot drinks have cold equivalents. so i guess my lavender honey iced latte is kiiiiiiind of okay, right? plus, the preparation involves only a minimum of effort – perfect for those times you just want to lie around, the cooling fan your best friend for the day.
for the lavender honey iced latte, i assembled my coffee ice cubes (prepared the evening before), milk and the lavender honey syrup and mixed them in a glass. see? cutting the movement to a minimum! to make lavender honey syrup, simply combine 1/2 cup sugar (about 112 grams), 1/4 cup honey, 1/2 water and about 1/4 tsp lavender buds in a pan, bring to the boil and let it simmer for 10 minutes. let it cool down, strain the syrup and bottle it up (can be kept in the fridge in a sealed container for several weeks (imagine the possibilities…lavender mojito, anyone?)). if you’re feeling really fancy, feel free to add ice cream. i did…it’s just too hot (and good) not too.
