only one and a half weeks left to christmas! (insert shocked facial expression here, because, yes, shocked is what i currently am!) gifts still need to be thought of, the christmas cookies haven’t been baked yet and the tree is nowhere to be seen. i did however watch ‚love actually‘ on friday, while drinking mulled wine, so that’s one advent must-do crossed off the list. phew! (now i just need to get jump out of my head again…)
in true christmas spirit, i decided to give my pancakes a christmassy twist this week. i did think about making chai flavored pancakes for a while, but changed my mind last minute and went for even more christmas in the end: GINGERBREAD pancakes. opting for my trusty pancakes recipe, i simply added the necessary spices to the mix.
now, i know, good pancakes don’t really need toppings (not counting maple syrup. maple syrup is always welcome. always), but this time, i was inspired to add a little somethin’ to mine. that little somethin’ turned out to be caramelized pears – ’tis the season, after all.
